Hummus- حمص بطحينه

Hummus is one of the most famous and popular dips in the Middle East. It has been known around the world too as a healthy appetizer full of flavor and zest.
Here is an easy to prepare recipe for this delicious dip:
Ingredients:
- 1 can Chickpeas- any brand- Drain and wash
- ¼ cup lemon juice
- ½ cup Tahini sauce
- 1 Teaspoon Cumin

- Couple of crushed garlic cloves
- Salt to taste
- Parsley, Paprika or Sumac and Olive Oil for garnish






Directions:
- In a food processor mix all the ingredients and process them on high speed.

- Pour into a serving bowl, garnish with parsley, Sumac, Cumin and Olive Oil, or you may garnish to your liking using whole chickpeas and Olive Oil.

يعتبر الحمص من أكثر أكلات ألشرق الأوسط شهره في العالم. و جاءت شهرته لطيبة مذاقه و فوائده الصحيه. الوصفه هنا سهلة الأعداد و سريعه.

ألمقادير:

علبة حمص . صفيها من الماء و اغسليها بماء نظيف.

ربع كوب عصير الليمون

نصف كوب طحينه

ملعقة صغيره من الكمون

حبتين ثوم مدقوقين

ملح حسب الرغبه

بقدونس مفروم للتزيين- أو التزيين حسب رغبتك بالفلفل الرومي المطحون, حبات الحمص المسلوق, السماق أو أي نوع آخر من التزيين .

زيت زيتون

ضعي جميع المقادير في الخلاط الكهربائي أو ماكنة الفرم الكهربائيه (ألمولينكس) حتى تصبح ناعمه و لها قوام يميل الى الجمود لكن الخليط في نفس الوقت طري, مناسب للتغميس.

صبي الخليط في صحن التقديم . زينيها بالبقدونس المفروم و صبي قليلا من زيت الزيتون.

Hi Mimi!
I am making this today. I couldn't find any tahini sause here in rural Indiana...I hope it's ok to make it without it.
I'm also trying to make falafals for the first time. Again, no tahini. I'll put it in pita bread & add humus & maybe some cucumber sauce. (along with some raw spinach, tomatoes, & onion).
Sounds delicious to me!

Jane, i hope it will work out for you without the Tahini...try to add a table spoon of plain yogurt to the hummus to liquefy it a little and add a tart taste to it. be generous with drizzling the olive oil on top of your hummus plate, it gives it a nice taste.
your falafel sandwich sounds great. you can have it with small cut tomatoes and cucumber salad dressed with olive oil and lemon juice. good luck and happy cooking/eating!

Summer,
I'm sorry, I just assumed your name was Mimi! I'm so sorry 'bout that. :)
I found some recipes on about.com for hummus & a few of them said you could leave the tahini out if you wanted. I wished I could have found some, but oh well. I added 1/4 c. olive oil to it, plus drizzled some on the top. The kids & I really liked it, but my husband didn't care for it at all.
And the falafels turned out really good (again, my husband didn't like them much). It was really good with the hummus AND the cucumber sauce on it. Yum! I also put on our pita bread some spinach leaves & diced tomatoes & onions. We also liked taking a spinach leaf & putting on a dab of hummus, cucumber sauce, & a piece of tomato & rolling it up & eating it. That was very good! Our 5 year old kept asking for more.
It was also quite the adventure because we were having some pretty severe storms here & our electric went out just as I took the last batch of falalels out of the fryer.
So we started eating by candle light. Within a few minutes it came back on, but we almost had to stop supper to take cover because we had 80 mph winds! Wow! What a supper!

Jane,Thanks for the amusing story of your dinner adventures! i am glad the outcome of the hummus and the falafel came out good and you and your son liked them.
the spinach wraps sound so good ....I actually make Spinach salad, i will post it soon and i use Spinach instead of lettuce in my salads...i like the taste and the good health benefits that come with it.
No problem about the name! Mimi is my beautiful second granddaughter who will be 2 years old on july 4th. i love her and her name, so i called my blog after her name. thanks for checking out back! have a great day.

I tried improvising some hummus last week (internet was down) but it turned out rather tasteless, although my friend enjoyed it on our hiking trip. She's not much of a cook so seeing me whip out the food processor probably impressed her so much she didn't notice the hummus was bland :P I see from this I forgot to add garlic and I skimped on the tahini. I will try again with your recipe. Thanks Summer!

Lillian, sometimes i add a tablespoon of yogurt to the hummus and mix it in, it kinda breaks the taste of the chalky tihini. try it, but make sure it does not become runny.

Hi Mimi,

Thanks for the recipe, Humus is my #1 favorate dish, I can eat it everyday! I went to Amman 2 years ago and visited every Humus shop in the city!

I live in New Zealand, so i make my own humus at home.

I'd like to make a comment on your recipe: from personal experience, I think Humus can taste a lot better without cumin, although I love cumin, especially with lentil soup, but I found cumin could change the taste if you over do it.

Tips: For decoration, you can use paprika to decorate your dish, also whole chickpeas (cooked).

If you're boiling the chikpeas, you can use the water to thin down the humus in the blender, or simply add cold water.

Yousif, Thanks for your comment and recipes! i appreciate your input. i add cumin to it because this is how my family likes it, and i only add a little bit, not much to overwhelm the taste. it does work well with it. you may add or garnish yours any way you like! :)
